Crockpot Tortellini Soup

IMG_2979
This crockpot tortellini soup is equally as simple as it is delicious. And it makes a pretty fair amount for leftovers! One of these days, I’m going to get around to seeing how well it freezes. Until then, if one of you get to it before me, let me know how it goes! 🙂

Ingredients:
1 Bag Frozen Tortellini
1 9oz Bag Fresh Spinach (I’m not a huge fan of spinach, so I typically use half of a bag)
2 Cans Italian Style Diced Tomatoes
1 Box (32oz) Vegetable Broth
1 Block of Cream Cheese, cut into chunks
Directions:
Throw everything in the crockpot, stir and cook on low for 5-6 hours! (I typically stir it a couple of times over the cooking time to better spread out the cream cheese)
