Crockpot Pumpkin Turkey Chili Have I mentioned I have the best husband? I have? Oh, well, let me just mention one more reason… he makes me dinner. Kyle grew up in a family where Sundays were meant for cooking. I, on the other hand, grew up in a family where we knew every Friday night was pizza night. Now that we’ve had to mesh our two worlds together, we’ve come up with a  pretty good system. I cook all week long (we rarely ever do take out) and Kyle plans the weekend meals. At least that’s the way it’s supposed to go. Typically, I plan all week and leave Saturdays for eating out, or having dinner with friends and Sundays I plan a big meal for leftovers for Kyle to take for lunch during the week (soup, casserole, etc). However, every once in awhile… Saturday AND Sunday stay blank. Those days roll around and I wait until the last minute to plan something… that we usually don’t have ingredients for. There is nothing hubby hates more than not having a plan for dinner! So, when that happens, he usually steps up his game and plans the meals for the next weekend. Can you tell the weekend before last we were at 5pm with no idea what was for dinner… OOPS! Anyway, I feel very blessed that even though he doesn’t always remember to plan the weekend meals, he has no problem running to pick up ingredients and force me out of the kitchen so he can deal with dinner. Crockpot Pumpkin Turkey Chili A couple of weekends ago he suggested Crockpot Pumpkin Turkey Chili. I was skeptical, but it sounded like it could be good. I am SO glad I let him try it, it was delicious! It is such a great fall/winter chili and not too much spice at all! Granted, he did only put about 1/2 the chili powder the recipe called for, but even with that, there was really no kick. In fact, I think I would have been good with the 1 Tablespoon the recipe suggests. We served ours with corn bread muffins (but someone forgot the baking powder… shhhh. Hey, they still tasted good!)
