Rice Krispie Treat Bites

Rice Krispie Treat BitesThese Rice Krispie Treat Bites were a little something I had in mind for Everleigh’s party (yes, it happened yesterday,  and yes, I am still recovering!).
I saw an original post on Pinterest to make these in ice cube trays and to do them in icing. Well, this mama doesn’t have ice cube trays, and while I was standing in Target about to buy one… I thought, ‘let’s work smarter, not more expensive here Chrissy. The mini cupcake tin you have would be just as effective’. So, I put down the ice cube tray down and backed away. Chrissy-1 Target-0!
I also chose not to do icing. I wish I could say it’s because I thought they would be sweet enough, or because I didn’t want to add more calories, but it’s because it was 9:30pm at night and I was tried! I figured the sticky marshmallow in the treats might be just as sufficient… and it was! It probably wasn’t quite as effective as the icing, when it comes to holding the sprinkles on, but it did the trick and looked equally as cute!
So, want to know how to make these bad boys? SIMPLE.

Instructions:
1) Follow the directions on your favorite box of crispy cereal to make “Rice Krispie Treats”.
2) Spray a mini cupcake pan with cooking spray, press the treat mixture into the pan and let sit for an hour.
3) Meanwhile, dump your sprinkles onto a plate and get ready to dip!
4) Once the treats are set, press them into the sprinkles, while also rolling them on their side to cover a bit of the edge of the treats.
 
This made about a tray and a half of treats. And I cheated on time- I probably only let mine set for about 30 minutes and they were just fine! I stored them in an airtight container with wax paper between each layer until party time! Enjoy!
