I am generally not at ALL a fan of meat sauce. I don’t even like spaghetti sauce with meat. However, my Father-in-Law makes the BEST bolognese sauce. I had a craving for it a few weeks ago and my darling husband made it for me while I was away. I came home to a fully prepared, delicious dinner. It fed us for a few meals and we still have a container in the freezer. (I’m saving that baby for when we need quick, simple meals come a month from now!).
This is the perfect meal for a fall Sunday!

Bolognese Sauce
1 1/4. lb ground beef
1 lb. sausage, out of casing
3 stalks celery, chopped
2-3 medium carrot, chopped
1/2 onion, finely chopped
28oz. crushed tomatoes
8-10oz. red wine (Cabernet is best)
1. In one large pan, mix ground beef and sausage. Chop as finely as possible and cook through.
3. While the meat is cooking, in a dutch oven, cook the chopped celery, carrots and onion with a healthy amount of olive oil (about 2 Tbsp) until the onions are translucent and the carrots and celery are soft.
4. Add the crushed tomatoes and red wine to the vegetable mixture, and reduce the heat.
5. Once meat is cooked, drain and mix with the vegetables. Stir and simmer on low for 2 1/2- 3 1/2 hours, covered.
