This may not be a new concept by any means, but I first came across “Toasted Blueberry Muffins” while in college. I would frequent Waffle House with my husband and his roommates, and had these for the first time ever, after my husband introduced me to them. I, typically, am not a huge muffin girl. I’ll take cookies or brownies over cake or muffins any day. However… these are just about the BEST THING EVER after a long night out. They are warm and crispy, yet with a soft inside. There is the crunch from the raw sugar on top, that makes them just so satisfying to eat. Oh, and then theres the blueberries that pop in your mouth with each bite. Ok… I’m getting hungry.
Anyway, I have tried multiple homemade blueberry muffin recipes, but there is just nothing that beats bakery bought muffins. I hate to buy the processed, preservative ridden muffins from the grocery store bakery, but I’m telling you, there is no other way to do it. Unless, someday I find the perfect recipe! So, here’s the painstaking process:
1) Buy muffins (make sure you get the ones with the raw sugar on top- it’s totally worth it!)
2) Warm a small frying pan on medium heat
3) Meanwhile, slice each muffin in half and generously butter (about 1-2tsp)
4) When the pan feels warm, place each muffin, butter side down until browned to your liking, for me… that’s pretty brown 🙂
