I came across a recipe on Pinterest that was for a “BLT Alfredo Skillet Ravioli”. Although I am a fan of BLT’s, I wasn’t sure how I felt about bacon being in my pasta. Especially since we really only eat turkey bacon, which doesn’t get crispy like regular bacon. So, I omitted that part and added some garlic, to make it more of an italian dish. It was super yummy and my hubby loved it! It will definitely become a staple on our menu list!
Skillet Alfredo Ravioli
Ingredients:
25 oz bag frozen cheese ravioli
1 Tbsp. olive oil
1 tsp. garlic
10 oz container cherry tomatoes, halved
1 c. frozen chopped spinach, thawed
15 oz jar alfredo sauce (or make your own)
Directions:
1) Cook Ravioli according to package directions.
2) Meanwhile, heat olive oil in a large skillet. Add garlic and cook for about one minute. Add halved tomatoes and cook 3-5 minutes on medium heat. Add spinach.
3) Add drained ravioli to veggie mixture in skillet, as well as alfredo sauce and cook 1-2 minutes longer, or until warmed through.
4) Serve immediately- serves 5-6.
