When I hear “artichoke” I typically steer clear. I think it’s because 1) they don’t look appetizing and 2) I remember my mom never liking artichokes on her pizza.
However, my husband has been eating artichokes for at least the 10 years that I have known him. His parents put them in many dishes and on salads. My first encounter with artichokes was from The Melting Pot when we ordered their famous Spinach Artichoke Dip. Since then, I have grown some taste buds for the little things. My hubby has grown more fond of them recently (or maybe he’s just tired of my very boring, very american palette). So, I decided to try and incorporate them into our pizza & salad nights, by making Spinach Artichoke Dip Pizza.
It is super simple to make and, get this, it’s delicious. So delicious in fact, Everleigh will actually eat it! I was STUNNED. And she even ate the leftovers. This from the two-year old who’s diet consists of kraft blue box mac and cheese and peanut butter and nutella, jelly or fluff.
Ingredients
1 Refrigerated pizza crust
5oz frozen chopped spinach, thawed and drained well
1 jar artichoke hearts, drained and chopped
1/4 c. mayonnaise
2 Tbsp. sour cream
1 c. mozzarella cheese, shredded
1/2 tsp. garlic powder
Parmesan cheese, grated or shredded
Directions
1) Preheat oven based on directions of pizza crust. Unroll onto baking sheet and pre-bake, if necessary, according to directions.
2) Mix together all of the above ingredients, with the exception of the parmesan. Spread evenly onto the pre-baked pizza crust and place back in the oven, cooking for the remainder of the time stated on the pizza crust instructions.
3) Sprinkle parmesan onto the pizza right out of the oven, while still hot.
