Pecan Pie Bars | Recipes

I have been eyeing these pecan pie bars for quite sometime. I have never actually had pecan pie, but have always been intrigued by the looks of it’s yummy gooeyiness. Though the whole concept didn’t sound all that appealing to me (I have an issue with food textures!). But, I thought my husband would enjoy them and it would be a good way for me to try out the concept of pecan pie. The original recipe states a 45 minute bake time, however, at just over 30 minutes, mine were looking almost a  bit overdone, so I took them out, and according to my official taste tester, my husband, they are quite delicious!

Ingredients:

▪   2 c. all purpose flour

▪   1 c. cold butter (2 sticks)

▪   1/4 tsp. salt

▪   3 eggs, beaten

▪   1 c. light corn syrup

▪   1/2 c. light brown sugar

▪   1/2 c. granulated sugar

▪   2 tsp. vanilla extract

▪   2 c. chopped pecans

 

Directions:

Grease or line a 9×13 inch pan with parchment paper, set aside

Pre-heat oven to 350 F.

In a medium-sized bowl, combine flour, 1/3 cup sugar and salt, stir together. Cut butter in mixture with fork or pastry cutter until butter is in tiny pieces, about the size of a pea. Press mixture firmly into bottom of pan and bake for 20 minutes. (If mixture is too crumbly, add a tablespoon of ice cold water. But mixture should be pretty dry)

In another bowl, combine corn syrup, brown and granulated sugar, mix well. With an electric mixer, beat in eggs one at a time, add vanilla and fold in pecans. Pour mixture into previously baked crust, and bake for about 3o minutes. Also the filling will puff up and become a blond-ish color, this is normal and what we want!
