Crockpot BBQ Chicken Sandwiches | Recipes

I LOVE me some crockpot recipes! Something quick that can be started while the little is napping, and can be thrown together quickly around dinner time as hubby walks in the door.

I particularly adore this recipe, because you can use frozen chicken, YAY! I am notorious for forgetting to set out meat for dinner, so this works perfectly for me.

Ingredients:

1- 1.5 lb skinless, boneless chicken breast (frozen or thawed)

8-10oz BBQ sauce

Rolls/Bread of Choice

Cheese of choice

Directions:

Place chicken in crockpot, cover with all BBQ sauce. Place slow cooker on low and cook 4-6 hours. Occasionally brush chicken with BBQ sauce in crockpot.

About 1 hour before completion, use two forks to shred the chicken. Continue to cook for about an hour.

Once chicken is done, compile sandwich as you would a grilled cheese (butter on the outside, cheese *and meat* on the inside). Mangia, Mangia!
