Anywho, I actually quite prefer almond butter over peanut butter. The flavor is much more subtle. Now, when I eat peanut butter, I find it to be over-powering at times. This recipe is originally from Sweet Potato Chronicles. But I made some changes to it, some of which I would keep, and other’s I would throw away… more of that later in the post.
Almond Butter Chocolate Chip Cookies
1/2 cup (1 stick) butter, softened
1/2 cup smooth almond butter
1 cup brown sugar
1 egg
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped semi-sweet or dark chocolate
Method
Preheat your oven to 375. Grease a baking sheet with butter.
Cream the butter and the sugar together. Add the almond butter. Next add the egg and mix until fluffy.
Whisk the flour, baking powder, soda and salt together. Combine the dry ingredients into the butter batter in stages, blending until incorporated.
Stir in the chocolate.
Drop a tablespoon amount of dough onto the cookies sheet. Space your cookies about 1-inch apart. Bake in the oven for 8-10 minutes.
Remove from the oven and allow to cool for a few minutes. Transfer them to a wire rack to further cool. Store in an airtight container for 5 days
** Ok, now for my changes that I would suggest not following. Rather than mini chocolate chips, which the original recipe calls for, I chopped up some chocolate baking bars I had. I would HIGHLY suggest this for regular ole’ chocolate chip cookies, however, with these cookies, the disbursement of shaved chocolate takes away from the almond butter flavor in the dough. I say “shaved” chocolate because as you’re chopping your chocolate bars, you’re inevitably going to have shavings as well- and we don’t throw shavings away, we pour those in the bowl too!
