Almond Butter Chocolate Chip Cookies | Recipes

IMG_6159I was so excited to find this almond butter chocolate chip cookie recipe when browsing Foodgawker. Have you ever used Foodgawker? It is an amazing site with lots of yummy recipes and food photos. I have been lucky enough to have a few of my recipes, and photos, featured on the site. It’s my go-to place for dinner and dessert recipe ideas. You should DEFINITELY go check it out!!

Anywho, I actually quite prefer almond butter over peanut butter. The flavor is much more subtle. Now, when I eat peanut butter, I find it to be over-powering at times. This recipe is originally from Sweet Potato Chronicles. But I made some changes to it, some of which I would keep, and other’s I would throw away… more of that later in the post.

Almond Butter Chocolate Chip Cookies

1/2 cup  (1 stick) but­ter, soft­ened

1/2 cup smooth almond but­ter

1 cup brown sugar

1 egg

1 1/4 cups all-purpose flour

1/4 tea­spoon bak­ing pow­der

1/4 tea­spoon bak­ing soda

1/4 tea­spoon salt

1 cup chopped semi-sweet or dark chocolate

Method

Pre­heat your oven to 375. Grease a bak­ing sheet with butter.

Cream the but­ter and the sugar together. Add the almond but­ter. Next add the egg and mix until fluffy.

Whisk the flour, bak­ing pow­der, soda and salt together. Com­bine the dry ingre­di­ents into the but­ter bat­ter in stages, blend­ing until incor­po­rated.

Stir in the chocolate.

Drop a table­spoon amount of dough onto the cook­ies sheet. Space your cook­ies about 1-inch apart. Bake in the oven for 8-10 min­utes.

Remove from the oven and allow to cool for a few min­utes. Trans­fer them to a wire rack to fur­ther cool. Store in an air­tight con­tainer for 5 days

** Ok, now for my changes that I would suggest not following. Rather than mini chocolate chips, which the original recipe calls for, I chopped up some chocolate baking bars I had. I would HIGHLY suggest this for regular ole’ chocolate chip cookies, however, with these cookies, the disbursement of shaved chocolate takes away from the almond butter flavor in the dough. I say “shaved” chocolate because as you’re chopping your chocolate bars, you’re inevitably going to have shavings as well- and we don’t throw shavings away, we pour those in the bowl too!
