So… this “Strawberry Cream Cheese Dip” recipe was a happy accident. I was hosting a Mommy Sleepover (yes, you read that right) and decided to make the Strawberry Cream Cheese Pie that years ago I found, I believe, on the back of a Keebler graham cracker crust package. Well, I have a realllllly bad habit of not checking pantry stock and/or recipes before making the grocery list. This inevitably ends up in me making multiple trips to the store, or calling hubby on the way home from work and asking him to stop and pick items up. Or, in this case… a happy accident! I am a true believer in substation and working with what you’ve got! Through that method, I found a strawberry cream cheese dip I love! 🙂 I was about 4oz short on cream cheese, added 6oz more strawberries than I needed and probably a cup too much cool whip. Oh well… I liked the dip equally as much! What You’ll Need: 1 pkg (16oz) frozen strawberries, thawed 10 oz cream cheese 1/4 c. sugar 1 tsp. vanilla 1 container (8oz) cool whip, thawed Directions: 1) Drain strawberries; reserving 1/4 c. liquid. 2) Beat cream cheese, thawed strawberries, sugar and vanilla until smooth 3) Fold in cool whip * If necessary, add 1/4 c. thawed liquid from strawberries to make dip thinner. I did not need to do this, but you may. 4) Serve with graham crackers, chocolate covered strawberries, animal crackers, pretzels of whatever you like!
