When I made these Dark Chocolate Cream Cheese Bites, I was pretty peeved that I only made an 8×8 dish. However, after tasting them, I am SO glad I only used an 8×8 dish. These are SO delicious, I would likely eat all of them, so better to keep the portion small! These are pretty simple to make, and did I mention, delicious?! Oh right… I did! I really enjoy eating these out of the fridge. It makes the dark chocolate hard, which is so satisfying to bite in to, and then enjoy as it melts in your mouth! These are pretty sweet, so the small size is perfect to have a couple (ok, or maybe five), in your mouth and feel satisfied!
Ingredients
Bottom layer:
1 cup all purpose flour
1/2 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 tbsp butter, melted
1 egg
Middle layer:
8-10 oz. Dark Chocolate
Top layer:
5 oz cream cheese, softened
1.75 cups powdered sugar
1/2 tsp vanilla
4-6 oz. Dark Chocolate
Directions:
1) Preheat oven to 350 degrees.
2) In a large bowl mix together (using a wooden spoon) flour, baking powder, baking soda, salt and sugar to prepare the bottom layer. Add in melted butter and stir to combine. Add in one egg and stir to combine. Press mixture into an 8×8 sized baking pan and set aside.
3) Place 8-10 oz. dark chocolate, broken into approx. 1″ pieces, on top of bottom layer.
4) In a mixing bowl, beat together softened cream cheese, egg, vanilla and powdered sugar. Mix until well combined, then pour mixture over the middle layer. Spread gently with a spatula to cover. Chop up 4-6 oz. dark chocolate and sprinkle over the top of the cream cheese layer.
Bake for approximately 35-40 minutes or until golden brown. Remove from oven and let cool completely. Enjoy!
