My college roommate my junior year at Penn State turned me on to these lovely little things. They are not quite ice cream sandwiches- but close enough.
I have made them in various combinations and the possibilities are only as limited as your imagination! The instructions below are for the chocolate and peanut butter combination. But I also have pictured Chocolate and strawberry- they are my favorite!
Other combinations I have tried are full chocolate and full peanut butter (Meaning peanut butter on both cracker halves and chocolate on both halves).
The Basics (16 servings):
16 Graham Cracker sheets (plain, honey, cinnamon… whatever your heart desires!)
1 c. Cool Whip
1 c. Semisweet chocolate chips
1 Tablespoon of butter
Peanut Butter
1) First, melt the chocolate chips and butter together in the microwave. I microwaved mine for 45 seconds, stopping every 15-20 seconds to stir it. The end product is like a paste, which makes it easier to spread on the graham cracker.
2) Next, spread each cracker half with your choice of goodies. I used the melted chocolate and peanut butter. I used about 1 teaspoon of each for each cracker half.
3) Last, place about 1 Tablespoon of cool whip between the cracker halves and freeze on a cookie sheet for 1 hour- serve straight out of the freezer.
Chocolate and Strawberry Grahamwiches:
(Instead of peanut butter, I used chocolate on both sides and I added about 1/4 cup frozen strawberries in syrup that I mashed and mixed in with the cool whip. They are fresh, but satisfyingly sweet!)
